The other day, while the kids were napping, there was only thing holding me back from making some serious progress on my mile long to-do list.
Thoughts of no-bake cookies consumed my mind.
The problem was I was completely out of oatmeal. This wasn't reason enough to give up. I've been pretty obsessed with quinoa lately, mostly for breakfast. Since quinoa has so gracefully taken the place of oatmeal in my life lately, I figured it might make an acceptable substitute.
The texture was different than traditional oatmeal no-bakes, but they successfully satisfied my craving...and both kids loved them.
1/4 c Earth Balance1/2 c natural peanut butter (I prefer chunky)
2 T nutritional yeast
1/4 c dark cocoa
1/3 c sucanat (or other granulated sweetner)
1 t vanilla
1 c cooked quinoa (about 1/2 c uncooked)
shredded, unsweetened coconut
Heat Earth Balance and peanut butter over medium/low heat until combined. Add nutritional yeast, sucanat and cocoa and stir. Finally, add the vanilla. (The mixture will be fairly thick.) Combine the chocolatey mixture with the cooked quinoa. Then scoop mixture onto cookie sheet, sprinkle with coconut and chill in the fridge for an hour or two.
(Makes about a dozen cookies.)
